Ingredients

  • 4 cups chicken stock
  • 1 cup Papa’s Grits
  • 1/4 cup butter
  • 1/4 cup shredded Parmesan
  • 1 cup shredded cheddar cheese
  • 1 Tablespoon olive oil
  • 1 pound sweet Italian sausages
  • 2 Tablespoons minced onion
  • 2 cloves garlic, minced
  • 2 cups chopped fresh tomatoes about 1 1/2 lbs
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon Pepper
  • 2 Tablespoons chopped Basil optional

Instructions

1.In a medium saucepan, bring the chicken stock to a  boil. Add grits in a slow stream, whisking the whole time. Reduce heat, cover and simmer stirring frequently until the grits are very thick, about 20 minutes. Remove from heat and stir in butter and cheese, season to taste.

  1. Meanwhile, in a medium skillet, heat the oil over MEDIUM LOW HEAT and add sausages. Turn occasionally and cook until nearly done, about 10 minutes. Add onion and garlic to the pan and cook for 2 minutes. Then add tomatoes to the pan, season with salt and pepper and cook until sausage is done (Internal temperature of 165 degrees) and tomatoes are tender, about 5 -10 minutes.
  2. Serve grits topped with sausages and tomatoes. Sprinkle with basil and serve.
